Why are Mumbai’s bakeries feeling the pinch of a recent change

As air pollution rises in Mumbai, a 2024 civic order and a tighter court deadline are forcing pav bakeries to abandon wood-fired ovens and shift to electricity and gas.

While the transition is necessary, the city’s iconic bakeries feel the process is poorly planned, marked by high costs, missing gas infrastructure, and short deadlines. It could push many small bakeries to the brink of closure.
